Tofu & potato scramble



Ingredients:

  1. Firm tofu
  2. Canned asparagus 
  3. Two russet potatoes
  4. Paprika
  5. Garlic powder
  6. Thyme
  7. Vegetable oil
  8. Barbecue sauce (vegan friendly)

Steps:
  1. Wash and cut potatoes into desired pieces
  2. Season potatoes with garlic powder, paprika and thyme
  3. Cut tofu and season like the potatoes
  4. Turn on stovetop to medium heat and add 1 tablespoon of vegetable oil
  5. Open canned asparagus
  6. Once oil is heated, add in potatoes and cook until brown
  7. Add seasoned tofu and asparagus 
  8. Cook until browned
  9. Add some barbecue sauce for dipping 
  10. Enjoy
